Ingredients: 4 tablespoons of sieved sugar, 4 eggs, the grated peel of half a lemon.
Stir the sugar with the egg yolks and lemon for 10 minutes; fold in the stiffly beaten whites of the eggs, and bake on a plate coated with butter in a moderate oven for ¼ hour at most; serve immediately.
