Omelet soufflé, no. 1

(Recipe #13, page 165)

Ingredients: 4 tablespoons of sieved sugar, 4 eggs, the grated peel of half a lemon.

Stir the sugar with the egg yolks and lemon for 10 minutes; fold in the stiffly beaten whites of the eggs, and bake on a plate coated with butter in a moderate oven for ¼ hour at most; serve immediately.

Serves 5.

Ed. note: Counted as a NO DAIRY recipe, since it’s possible to grease the baking tin with something other than butter.
