Fresh cod are salted for shipment(*). After cleaning a fish well, place it in water for a few hours or overnight, depending on how heavily it has been salted. Set it on the stove in cold soft water with a small knob of butter and boil it slowly until it is soft, skimming frequently; this will take about ½ hour.
It is advisable to test a little of the cod before cooking it, to see whether the water needs additional salt. Serve with the same sauces as fresh cod.
