Brined cod

(Recipe #58, page 138)

To make this heavily salted cod truly soft, refresh it like salt cod for 3 days in water with soda. Then set it on the stove in cold soft water with a small knob of butter and let it draw slowly for 2 hours without boiling.

The sauces served with salt cod are appropriate; parsley sauce is also recommended.
