Broiling excellent mutton chops

(Recipe #92, page 97)

Trim the chops well, of course removing all the fat, pound them well, dip them in melted butter, and sprinkle them with salt and pepper, then zwieback crumbs. Broil them for 8 minutes on the gridiron, 4 minutes on each side, and bring them to the table as quickly as possible.
