Minced kidneys with roast veal

(Recipe #57, page 89)

Mince the roasted kidneys with their fat, then lightly brown a small knob of butter with a chopped onion; cook the kidneys, salt, nutmeg, a tablespoon of sour cream, and half a tablespoon of mustard thoroughly in the butter and serve on toasts with the roast.
