Fried chopped beef

(Recipe #35, page 84)

Mince together 4 parts meat trimmed of all fat and sinew and 1 part suet with salt; form into flat, round patties. Turn each slice in an egg into which cloves and nutmeg have been stirred, sprinkle with crumbled zwieback, and fry like steaks for a few minutes in foaming butter.
