Eggplant

(Recipe #23, page 55)

Only the white varieties of this pulpy egg-shaped fruit are considered edible; the purple varieties are considered toxic. To prepare slice in half vertically, cut a few slits in the flesh, roll the halves in a mixture of breadcrumbs, melted butter, pepper, and salt, and cook them a bit on the grill or in a frying pan. They can also be sliced, seasoned with salt and pepper, and lightly fried in butter.

Any fine accompaniment is suitable.
